Classic Greek Salad

No lettuce. That's not a Greek salad. Chunky tomatoes, cucumber, olives, and good feta with a proper olive oil dressing.

Ingredients

  • 4 large ripe tomatoes, cut into chunks
  • 1 English cucumber, halved and thickly sliced
  • 1 red onion, thinly sliced
  • 1 green capsicum, cut into rings
  • 1 cup (150g) kalamata olives
  • 7 oz (200g) block feta cheese
  • 2 tsp dried oregano
  • 4 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • Salt and black pepper

Instructions

  1. Combine tomatoes, cucumber, red onion, capsicum, and olives in a large shallow bowl.
  2. Season with salt, pepper, and half the oregano. Drizzle with olive oil and vinegar. Toss gently.
  3. Place the feta block on top. Don't crumble it, that's the tradition. Sprinkle with remaining oregano and another drizzle of olive oil.
  4. Serve immediately with crusty bread to mop up the juices.

Notes

A real Greek salad (horiatiki) has no lettuce. The quality of this depends entirely on the quality of your tomatoes and feta. Use block feta from a deli, not the pre-crumbled stuff in a bag. Serve alongside Crispy Chicken Thighs for a complete meal.
